Good soup recipe
Just started the Paleo diet and I want some good recipes for it. They can not have any carbs or sugar so if you have any recipes that would fit this bill please let me know. Want to try some good foodsSmile

GLUTEN FREE too.. .my all time favorite!!!

broccoli cheese soup!!!! From my sissys!!! Very easy and cheap and you can freeze it... this tastes as good as PANERA'S, even better!!!

My FAVORITE thing to add to it is to take SHARP CHEDDAR and spread it over a piece of wax paper. Salt and pepper and oregano the cheese.. NOW!! . Microwave 30-60 seconds and let it dry hard (2 min)
INSTANT CHEDDAR CRIPS...
these are your crunchy crackers!!!!

Ok...ready?

Ingredients

2 tbsps unsalted butter ? Tasty tip
2 lbs broccoli (chopped into 1 inch pieces, include the stems but peel them and cut them into 1/4 inch-thick slices)
1 onion (medium, chopped)
2 garlic cloves (minced)
11/2 tsps mustard powder
1 pinch cayenne
salt
4 cups water
1/4 tsp baking soda
2 cups chicken broth
2 ozs baby spinach
3 ozs cheddar (sharp, grated)
11/2 ozs parmesan (grated)
pepper (to taste)

in a large pot or dutch oven, heat butter over medium high heat.
Add broccoli, onion, garlic, mustard, cayenne and 1 tsp salt.
Stir frequently and cook until fragrant, about 6 minutes.
Add 1 cup water and baking soda and bring to a simmer.
Cook until broccoli is very soft, about 20 minutes.
Add broth and 2 cups water and increase heat to medium high.
Bring to a simmer, then stir in spinach and cook until wilted, about 1 minute. Add cheeses and blend soup with an immersion blender (alternatively, you can transfer soup to a blender and blend in two batches).
Adjust consistency of soup to your liking with remaining water (I found it didn’t need any more).
Season to taste with salt and pepper.
Serves 8. Each serving has 6.6g of carbs and 2.4g of fiber.

FYI TIP / on the fly......
some people like to add 1 tbspn of HEAVY WHIPPING CREAM to each cup and stir. Nobody like to cook with milk... soups break fast...and ruin and burn.. BUT to add the cream for IMMEDIATE SWEETNESS AND CREAMY GOODNESS.. this is the only way I can get my hubs to eat it,. b/c he LOVES hearty soup.
